That's what it's built for. The moment your parked car is moved, you get an alarm on your phone, while there's still time to act.
From then on, you and the police can follow the car's live position on the map, street-level accurate and updating as it moves. And if a thief finds and removes the tracker, that fires an alert too.
An AirTag has no GPS or mobile connection of its own. It only reports a location when someone's iPhone happens to pass nearby, and it warns whoever is carrying it that a tracker is traveling with them. Park a stolen car in a garage or a container with no phones around, and the tag goes dark.
